Beet salad with goat cheese

- trader joes precooked beets
- arugula and mixed greens
- goat cheese
- fine bread crumbs
- balsamic vinegar
- egg white

Chop beets and add to greens
Slice cheese log into disks about .5 in wide
Dip disks in wiskes egg white
Coat disks in bread crumbs
Heat .25 inch of olive oil in a skillet over medium high until hot
Fry disks for about 1 minute on each side.
Carefully (they can crumble) transfer to salad and serve immediately.

Dress with sprinkle of balsamic and a bit of salt.
